Tasting notes
Nose
Intense and complex aromas. Dried fruits (apricot, raisins, prunes) and nuts (almonds, walnuts) take the lead, alongside notes of caramel and vanilla from the American oak. Hints of orange peel, sweet spices (cinnamon, nutmeg) and a delicate dark chocolate foundation follow. With time in the glass, nuances of honey and light woody notes emerge.
Palate
Smooth and velvety entry. A silky texture envelops the palate. Flavours of salted caramel, milk chocolate and dried fruits dominate the gustatory profile. Sweet spices (vanilla, cinnamon), a touch of bitter chocolate and toasted wood notes are perceptible. The balance between sweetness and dryness is noteworthy — the sherry lending a fruity richness without becoming cloying. The alcohol is impeccably integrated despite the 40% ABV.
Finish
Medium-long, warm and comforting finish. Notes of dried fruits, spice and vanilla persist. A spiced touch and a light tannic astringency from the sherry emerge. The aftertaste is fruity and lightly woody, with an echo of chocolate and nuts. It leaves a dry and elegant sensation that invites another sip.
Editorial insight
Akashi Sherry Cask Blended is an invitation to discover the refinement of Japanese whisky through the soul of Spanish sherry. This expression captures the essence of two distilling traditions in a single bottle: Japanese precision and delicacy alongside the fruity richness and spiced character of Andalusian sherry casks. Created by Mikio Hiraishi — master blender and owner of the Eigashima distillery — this whisky bears witness to over a century of fermentation and distillation expertise inherited from the sake tradition the company has mastered since 1888. The influence of the nearby sea and the coastal climate of Akashi lend a unique character, while the sherry cask finish transforms the whisky into a memorable sensory experience. Its 50cl format makes it a perfect choice for thoughtful gifts or to begin a collection of Japanese whiskies.
Heritage & character
Eigashima Shuzo was founded in 1888 in the coastal city of Akashi, Hyogo Prefecture, as a sake producer. In 1919, it obtained Japan's first official licence to produce whisky — years before Suntory opened the celebrated Yamazaki distillery in 1923. However, it was not until 1984 that Eigashima began serious whisky production under the White Oak brand. The distillery is unique in Japan for its coastal location alongside the Seto Inland Sea, the only Japanese whisky distillery situated on the shoreline. This geographical characteristic influences the maturation process, imparting subtle saline nuances and a marine-humidity-influenced ageing. Eigashima's production philosophy is deeply rooted in sake tradition, employing fermentation techniques refined over more than a century. The stills are smaller than conventional ones, allowing for greater artisanal control. Production is deliberately limited: the distillery produces whisky for only one month per year, concentrating all efforts on maximum quality over volume.

Frequently asked questions
What type of whisky is Akashi Sherry Cask Blended?
Akashi Sherry Cask Blended is a Japanese blended whisky produced by the Eigashima distillery (White Oak). It combines 70% grain whisky with 30% Japanese malt whisky, aged in American ex-bourbon oak casks and finished for six months in Andalusian sherry casks. It is a Japanese-style whisky with European sherry influence.
What sets Akashi Sherry Cask Blended apart?
Several factors distinguish this whisky: it comes from Japan's first licensed whisky distillery (1919), has an extremely limited production (the distillery only produces whisky for one month per year), benefits from a double maturation imparting complexity (American oak and sherry), and is the only Japanese whisky distillery located on the coast. Its master blender is also an expert Toji in sake, bringing unique fermentation techniques.
How is Akashi Sherry Cask Blended best served?
Served at room temperature (18–20 °C) in a tulip or Glencairn glass to appreciate all its aromas and flavours. It may also be enjoyed with a drop of water to open the aromas, over a large ice ball for a refreshing aperitif, or in a Japanese highball (with sparkling water). It pairs excellently with semi-cured cheeses, dark chocolate, Ibérico charcuterie and toasted nuts.
Is Akashi Sherry Cask Blended a suitable gift bottle?
Yes, it is an excellent gift option. Its 50cl format is ideal for special gifts; it is available with a gift box; and it represents a sophisticated introduction to premium Japanese whisky. Its limited production and the prestige of the historic Eigashima distillery (founded 1888) lend it particular value. It is ideal for whisky enthusiasts, collectors or those who appreciate Japanese artisanal products.
